I still remember the first time I made these. One bite, and I was hooked—the crispy edges, the soft, fluffy center, and that irresistible seasoning.

Unlike some people who prefer sweet potato wedges, white potato wedges have always been my personal preference. And given good potato wedges are only available at a restaurant a long way from home, I wanted to create an easy, delicious side dish we could all enjoy in a weekly meal.

What I love about this recipe is how simple it is to whip up. You don’t need fancy ingredients, just a handful of pantry staples and some potatoes. It’s one of those dishes where the whole family eats the same thing, grabbing for seconds before the plate even hits the table.

Ingredients

Potatoes. The most simple ingredients often make for the most popular dish. This Buffalo Wild Wing Potato Wedges Recipe is no exception. To ensure your potatoes will turn golden brown, choose a roasting potato like russet potatoes and slice your wedges evenly.

Dried parsley. The mild flavor of this popular kitchen herb pairs perfectly with our potato wedges.

Dried marjoram.

Paprika. The absolute best way to season any type of roasted potato.

Garlic. This delicious dish gets even tastier with the addition of a little garlic. I personally can’t handle much, but feel free to increase the amount if you’re not sensitive to it. You can substitute for garlic powder if fresh garlic is unavailable, or even use onion powder instead.

Olive oil. If you like some spice, try using a spicy chili oil instead.

Salt and black pepper

How to Make This Buffalo Wild Wings Potato Wedges Recipe

Prep the Potatoes: Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper. Wash and scrub the potatoes thoroughly. I usually leave the skins on for that rustic touch, but feel free to peel them if preferred. Cut each potato into wedges. Aim for uniform sizes so they cook evenly.

Season the Wedges: In a large mixing bowl, combine olive oil, garlic, paprika, salt and pepper. Briefly stir the herbs and oil to form a more consistent marinade. Toss the potato wedges in the mixture until they’re evenly coated.

Bake to Perfection: If possible, arrange the wedges in a single layer on your baking tray, making sure they don’t overlap. You can alternatively mix the potato wedges half way through the baking process. Bake for 25-30 minutes in the preheated oven, flipping halfway through until golden and crispy. Cooking time may be a little longer if you have lots of overlaying potatoes.

Serve: Pair this delicious side dish with my slow roasted tomatoes or honey glazed carrots for a delicious dinner. Add a juicy mixed salad and you have yourself a meal. Don’t forget your favorite dipping sauces like buffalo sauce, ranch dressing, or simple sour cream. Top it all off with some homemade ice cream.

Store. Store any leftovers in an airtight container. You can re-heat them the next day by baking them in the oven for another few minutes.

    1. Hi Amy, thanks for spotting the typo, it’s supposed to read marjoram 🙂 It’s a herb similar to oregano and thyme. You can buy it dried or can plant it in your garden or a pot on the balcony. I hope this helps.
